Post Title:

Sous Chef

Purpose: To assist the Head Chef in the management and day to day running of the kitchen and to deputise in their absence.
Reporting to: Head Chef
Responsible for: Take responsibility for the kitchen team in the Head Chef’s absence
Hours: 48 hours per week organised on a shift basis
Salary/Rate: Salary dependent upon skills and experience.


Kitchen Management


·         Assist the Head Chef in the smooth day to day running of the kitchen and to deputise in their absence, delivering a consistently high standard of food for pub guests.

·         Work with the Head Chef to develop new dishes and move the menu through the seasonal changes.

·         Maintain the highest standards of cleanliness and food safety controls within the kitchen in line with company food safety policy and procedures to ensure compliance with current food safety legislation.

·         Help in delivering the COS targets by helping the Head Chef to control and monitor waste, portion control and ensure accurate menu costings.

·         Adhere to company and Health and Safety policies and procedures and ensure all documentation is implemented and fully up to date to safeguard and protect the welfare of all employees within the kitchen.

·         Work and lead by example, coaching, giving guidance where needed to maintain a positive working environment.











·         Assist the Head Chef in the training and development of the kitchen team to their maximum potential resulting in an internal progression pipeline.

·         Communicate effectively to the kitchen team through team meetings, regular 1:1s and coaching.

·         Help to motivate and engage the Chef team as individuals to reach their maximum potential.

·         Assist in the completion of the kitchen rota within agreed labour costs and deadlines as directed by the Head Chef.

·         Establish and maintain good communication with the Head Chef to agreed specifications and deadlines.

·         To assist the Head Chef in ensuring all new chefs/KPs receive equipment health and safety training in line with their induction plan, that this is documented and that any new changes to ways of working are cascaded effectively.

·         Coach and mentor apprentices within the business, assisting with their passport when necessary.



Stock Management


·         Assist the Head Chef in the weekly stock taking and in their absence carry out the weekly stock take.

·         Maintain excellent relations with suppliers, place orders and ensure invoice documentation is organised and any issues/shortfalls are accurately recorded.

·         Ensure the consistent rotation and levels of stock, to ensure quality and reduce wastage.

·         Assist with the accurate recording of waste, complimentary items and staff food.



Health & Safety and Food Hygiene

·         Assist the Head Chef in training and enforcement of the company food safety procedures.

·         Assist the Head Chef in the induction of new team members in the kitchen and through ongoing job-based training ensuring all equipment training is documented accordingly.

·         Maintain the highest standards of cleanliness and hygiene in all areas of the kitchen and stores, utensils and equipment.

·         In the absence of the Head Chef, take responsibility for the safety of the chef team when running the shift; reporting any dangerous occurrences, incidents or accidents to the duty manager who will investigate and take the necessary action needed.

·         In the absence of the Head Chef, ensure any food related incidents of foreign bodies, AFPs are communicated directly to the General Manager and in their absence the duty manager who will carry out the necessary investigation paperwork.



Company Assets, Safety and Security


·         Ensure that all company assets, keys, stock, property and goods are well cared for and secure at all times.

·         Maintain the highest personal standards of presentation, dress and behaviour and to ensure that this is maintained by all team members.

Additional Duties

·         Ensure the proper implementation of all company policies and procedures.

·         Attend training and team meetings as required.

·         Act as an ambassador for the company at all times and to carry out PR activities when requested by senior colleagues.

·         Undertake any other duties as may reasonably be required by the company.
